In the Middle Ages, Europe was ruled by powerful monarchs like King Edward III and King Richard II of England, King Philip IV and King Charles VI of France, and emperors like Charles IV of the Holy Roman Empire. In their royal kitchens, meat reigned supreme. Venison, boar, swan, and peacock were the stars, symbols of nobility and power. Imagine the rich, gamey flavor of venison, roasted to perfection and adorned with spices worth their weight in gold.

Speaking of spices, imported from Asia, spices such as saffron, cinnamon, cloves, nutmeg, and pepper were the hallmarks of luxury. Saffron added a vibrant hue, unmistakable aroma, and taste to dishes. Fruits and vegetables, often imported and expensive, included figs, dates, pomegranates, and citrus fruits. Root vegetables like parsnips and turnips provided earthiness, while leafy greens such as spinach and cabbage added fresh contrast.

Fish and seafood were indispensable, especially during Lent and other fasting periods. Royal kitchens saw an array of aquatic delights—salmon, eel, herring, even whale—preserved through salting and smoking, extending shelf life and intensifying flavors.
