Preparing the stuffing:
Cook the peppers with olive oil until it caramelizes.
Add the onions at the end of the pepper’s cooking process.
In a large bowl, add Panko (Japanese style bread crumbs), Parmesan cheese, two eggs, pepper to taste and the stuffing ingredients above.
Preparing the shrimp:
- Great with red wine.
- Make it into a light dinner by adding a simple Pasta & Oil.
